BESAN LADDU

BESAN LADDU

Yield:   10-15 laddus

Ingredients
1 cup gram flour/Besan flour
½ cup ghee (add extra ¼ optional)
¾ cup powder sugar
1 tbsp. Cardamom
4-5 Almonds(chopped)
4-5 cashew (chopped)
2 tbsp. Raisins




Instructions

Add 1 tbsp. of ghee in a pan over low heat, add nuts and fry them.
Then add remaining ghee, when ghee starts to melt sieve the gram flour over the ghee.
Mix well, roast it over low heat until it turns golden brown, and stir continuously.
When it roasted properly, you will get nice aroma from it.
It would take approx. 7-10mins.
Turn off the heat, transfer to large bowl and let it cool for approx. 10-20mins. Or till it reaches room temperature then add powdered sugar and mix well.
Add cardamom, fried nuts mix well. 
Shape the mixture into balls with your hands. Leave it for few hours then serve them or store in an airtight container.

Elephant Ears Or Palmiers

Ingredients
1 Puff pastry sheet
½ cup Sugar


Instructions
Preheat oven for 415 deg.F
Prepare baking tray.
Roll puff pastry sheet into1 cm thick. Cut the edges out and cut into rectangular shape.
Sprinkle sugar (both top and bottom of the dough).
Rollup the opposite side until they meet at the center.
Wrap with plastic wrap. Keep in the refrigerator for 10-15 minutes. Cut into 1.5 cm each pieces.
Brush water on both sides (top and bottom).
Then dip in sugar on both sides. When finished, arrange on the baking tray.
Bake 15-20 minutes. And turn upside down.
Bake for about 7 minutes or
till golden brown color.
Let it cool then keep it in a container.

Ingredients
½ tsp. Melted Butter
1cup Grated Coconut
¼ cup Tutti Frutti
¼ cup Assorted nuts and Raisins
½ tsp. Cardamom Powder
1 tbsp. Jam
2 tbsp. Powder Sugar
Puff Pastry Sheet


1. Heat ½ tsp. of butter in a frying pan and add dry grated coconut, nuts and sugar,
fry it on medium heat till sugar dissolves.
2. Add tutti-frutti, jam and mix well till everything combines. Switch off the flame and allow it to cool.
3. Take Puff Pastry Sheets roll it out, cut it out into two circles one big and one small
using  any cutter.
4. Spread the coconut sweet mixture over the sheets leaving the edges plain. Cover this sweet filling with small sheet and fix the edge. Slightly press the center and the edges with your hand so that the mixture and the sheets are completely sealed.
5.   Place it on a baking sheet and place it in oven that is preheated to 415 deg Fahrenheit, bake it for 20 minutes or till it turns golden brown.
6. Cut it into desired shape with a pizza cutter or knife and serve warm.


Note: Dry coconut or frozen/freshly grated coconut can be used.

Ash White Gourd Halwa

Ash White Gourd Halwa

Ingredients

4 cups grated ash gourd
1½ cups sugar
¼ tsp. crushed cardamom
½ cup mixed dry fruits (Raisins, cashews, almonds, pistachios) 
2 tbsp. ghee (clarified butter)


Instructions

Take a deep bottom non-stick pan, add the grated ash gourd in medium heat cook until all the water evaporates.
Add the sugar, stir continuously and until the mixture starts to leave the sides of pan.
Now heat 2 tbsp. Ghee in a pan, add dry fruits and fry in medium heat till they turn golden color.
Add the cardamom powder and fried dry fruits; mix properly until they blend well.Switch off the flame and serve hot or chilled.
