Potato filling/Aloo Masala/Aloogadde palya

Ingredients
6 potatoes, boiled
1 large onion, chopped
1 or 2 garlic
12-15 curry leaves
1 green chili, chopped
½ or ⅔ tsp. black mustard
seeds
½ Cumin seeds
10-15 Roasted cashews
½ or ⅔ tsp. turmeric powder
½ lime
1 or 2 tbsp. chopped
coriander leaves
2 tbsp. oil
Salt as required
Instructions
First boil the potatoes in
a steamer or pressure cooker, till they are fully cooked.
Peel and just crumble them
with your hands or chop them.
Heat oil in a pan, first
fry the mustard seeds and cumin seeds till they splutter.
Add garlic, green chilies
and curry leaves and sauté for some 20-30 seconds.
Add chopped onions and
sauté till they become soft.
Then add turmeric powder, cashew
and salt. stir for 2-3 seconds and add the potatoes.
Lastly add the lime juice
and stir well.
Add coriander leaves and
mix well with the potatoes.
Keep the potato palya
aside.
