Paneer Butter Masala

Ingredients
1 ½ cup Paneer (cottage
cheese) cut cubes
4-5 tbsp. Butter
4 tsp. Oil
2 Bay leaves
2 cardamom
1 medium Onion sliced
2 tsp. Ginger paste
2 tsp. Garlic paste
1 tsp. Red chilli
powder
1 tsp. Garam masala powder
1 tsp. Roasted cumin seed
powder
5-6 medium Tomatoes chopped
4-5 cashews
Salt to taste
½ tsp. Kasturi methi
crushed
¼ cup Fresh cream
Instructions
Heat a pan with oil, fry
onions they turn transparent.
Fry tomatoes for 3-4mins,
till the mixture turns soft.
Blend onions, tomatoes
mixture with soaked cashews into smooth paste.
Heat a pan with oil add Bay
leaves and cardamom and fry add butter add ginger-garlic paste fry until
raw smell disappears.
Pour blended puree, add
salt, red chilli powder, Garam masala powder, Roasted cumin powder and add ½
water and mix.
Add paneer and crushed
Kasoori/kasturi methi. Stir well and cook for 3-4mins.
Then garnish with cream and
coriander leaves and serve with roti/naan or rice.
