Potato/Aloo Puff

Potato/Aloo Puff

Yield:   20 small puffs

Ingredients
Puff pastry sheet

For Filling:
3 Potatoes, boiled
1 Large onion, chopped
1 or 2 garlic
12-15 Curry leaves
1-2 Green chili, chopped
½ tsp. Black mustard seeds
½ Cumin seeds
10-15 Roasted cashews
½ tsp. Turmeric powder
½ Lime
1 or 2 tbsp. Chopped coriander leaves
2 tbsp. Oil
Salt as required

Instructions
For Filling:
Heat oil in a pan; first fry the mustard seeds and cumin seeds till they splutter.
Add garlic, green chilies and curry leaves and sauté for some 20-30 seconds.
Add chopped onions and sauté till they become soft.
Then add turmeric powder, cashew and salt. Stir for 2-3 seconds and add the potatoes.
Lastly add the lime juice and stir well.
Add coriander leaves and mix well with the potatoes.
Keep the potato filling aside.
Preheat the oven to 415 degree F.

Line baking sheets with parchment paper.

Thaw frozen puff pastry.

Cut the puff pastry sheet into rectangle or square shape

Scoop the potato filling and place it on one side of the rectangle and fold other side above it. Seal the edges.

Place them in baking sheet. Bake for 20min. or till golden brown color. Serve it hot.
